Red Berry Superfood Powder Recipe Ideas
Tropical Berry Smoothie:
Ingredients:

half a passion fruit (scoop out the centre and discard the skin)

quarter of a mango

1 tsp berry powder

almond or coconut milk to taste

ice cubes
Blend all ingredients in a blender or processor.
Very Berry Smoothie:
Ingredients:

frozen or fresh berries (a mix is great)

1 tsp berry powder mix

1 tbsp greek yoghurt or kefir
-
1 tsp berry superfood powder
-
almond milk to taste
Blend all ingredients in a blender or processor.
Summer Berry Smoothie:
Ingredients:

sprig of fresh mint

half a banana

almond milk to taste

1 tsp berry superfood powder
Blend all ingredients in a blender or processor.
Red Berry Overnight Oats Recipe:
Ingredients:

Oats
-
1tsp berry powder
-
1 tsp greek yoghurt (omit this for dairy free version)
-
milk (dairy or your choice of nut milk)
-
1 tsp chia seeds
-
optional: 1/2 tsp cinnamon or ginger powder

Topping: nuts such as flaked almonds, pecan nuts, walnuts and fruit such as berries, banana or apple.
Put all ingredients in a bowl. Use 1 part oats to 2 parts milk, so if you use a small mug of oats, add 2 small mugs of milk. Mix well and spoon it into a mug, glass or mason jar. Cover and refrigerate overnight (or for about 2 hours minimum). Top the oats with nuts such as flaked almonds, pecan nuts, walnuts and fruit such as berries or apple and enjoy.

Berry ice cream
Ingredients:

1/4 lemon (zest & juice)

225g mixed berries
-
3 tsp red berry superfood powder
-
198g condensed milk
-
300g double cream
Mix the lemon zest and juice with the mashed berried and condensed milk. Mix by hand or with a food processor.
Sieve to remove berry pips if preferred.
In a separate bowl, whisk together double cream until soft peaks form (don't whisk beyond this point)
Carefully combine both bowls.
Freeze!
Mixed Berry Cheesecake:
Ingredients:

175g digestive biscuits
-
100g melted butter
-
100g strawberries
-
100g raspberries
-
100g blueberries
-
tsp red berry superfood powder
-
150g icing sugar
-
400g cream cheese
-
300g double cream
-
extra berries for the top
Line a 20cm diameter round tin with greaseproof / baking paper
Crumble the biscuit (use a food processor or put into a plastic bag and roll over them with a rolling pin) and add the melted butter. Mix well and press into an even layer at the bottom of the tin
Put the berries and icing sugar into a pan and heat. Stir and mash until broken down, then sieve and leave to cool
Beat together the cream and cream cheese then whip the berry juice into it.
